200gLemon aspen
100mlLemon juice
500gSugar, castor
1lMilk
12 Egg yolks
1lCream
200mlGlucose

Puree lemon aspen. Boil with lemon juice for 5 minutes. Add sugar and milk and warm through. Pour over the egg yolks, slowly whisking. Cook gently over a water bath until it reaches a light custard consistency. Strain, stir through the glucose and add the cream. Cool and churn in an ice-cream maker.
